Ingredients:
- 125 gs butter
- 1/3 cup castor sugar
- 1 large egg
- 2/3 cup sultanas (raisins)
- 1 cup self raising flour (sifted)
- 2-3 cups lightly crushed cornflakes (tip: use a plastic ziplock bag)
- Makes approximately 40++ cookies depending on how big you want your cookies to be
Method:
- Cream butter and sugar with an electric mixer till fluffy and well combined.
- Add egg, beat well.
- Fold in flour and sultanas.
- Spoon a teaspoon of cookie batter into crushed cornflakes and turn to coat.
- Form into sphere shapes (about the size of a chicken meatball) and place on nonstick cookie tray.
- Place cookies spheres 2-3 cm's apart to allow for spreading.
- Bake in preheated 150 degree oven for 15-18 minutes. Surface should be golden and crisp.
The batter should look something like this

lil chef tips:
- to determine whether you have creamed your butter and sugar till its desired texture, tip over your mixing bowl (180 degrees), if the mixture is stiff and does not fall off, you can stop creaming the batter
- to avoid wastage of cornflakes, measure 1 1/2 cups of cornflakes first, and add on if necessary
